a decade | a difference

This weekend,in Ankeny, Iowa,
our 10 year high school reunion
is taking place.
AHS Class of 2001

While we are not there to catch up with 
acquaintances 
and celebrate with the many friends we have 
maintained close relationships with 
{far beyond the halls of Ankeny High School 
and the 'infamous' Pit}
the occasion has brought on a lot of 
reflecting
as to where we are
10 years later
and who we
were
as 18 
{cough, cough, I guess one of us was 19}
year old high school graduates.

Where did you think you would be in 10 years?

From age 8 I knew I wanted to be an elementary school teacher, so I had a clear vision for career goals although I am certain I did not see the term 'juvenile delinquency' on the horizon.  I thought I would be married by 28 {however it is doubtful that I had any idea it would be to my friend & classmate and I definitely did not think I would be one of the first to be married among my friends}. Probably the biggest discrepancy about where I thought I would be and where I am... I saw myself living in the Ankeny/Des Moines area and having a child {27 was my magic number}. One of the most amazing things 10 years later has to be the friendships. I can't even form words for the gratitude I feel to share such history with so many amazing people all while participating in one another's future. It's beautiful. Really.

Matt's answer wasn't as straightforward. When I asked him over dinner he responded with sarcasm and stated something like,
"I thought I might be in Bogota, but not Cartagena..."
He then told me as a senior in high school he was likely not thinking about what the next 10 years would look like {in full disclosure, he is still likely not thinking about what the next 10 years look like}
After I shared what my 10 year plan had looked like, he played the game with me and said that he too did not see himself marrying a classmate and was going to settle in the Des Moines/Ankeny area...

gwyneth

People tend to have a strong opinion about Gwyneth Paltrow...

she is kind of one of those actresses that people adore
or not so much.
I was slightly impartial to her, 
although I always thought she had to be pretty cool 
since she and her husband are 'friends' with Jay & Beyonce.
After she started guest staring on Glee, I'm adoring....
So when she came out with a cookbook, I was admittedly intrigued. 
Now that I'm a full time 'ama de casa' 
{that's Spanish for housewife and literally what my Visa states my occupation as}
 I spend much more time recipe hunting. 
I found some sneak peeks of the cookbook on her website/blog and discovered:
 'Lee's Rocking Fish Tacos'

Matt and I have enjoyed this dish a few times and I thought sharing it would
be a great opportunity for ya'll to come on in to my 
Colombian Kitchen.
We had to make a few slight 'alterations' due to our location, 
but it's a delish summer dish.
Here's the ingredients

A few things to note...
*The first ingredient on this recipe is a "bunch of cilantro". I was pretty much sold from that point on...
*You may or may not notice that there is no fish in this picture for the fish tacos. Well, surprisingly fish seems to be a difficult thing to get around here. Don't get me wrong... they have fish, but 1) we are unfamiliar with the pescado variety here 2) they sell it with its head, eyes, & bones. I love fish and we got used to eating it often living on the Gulf Coast, but I am not the girl who 'filets' her own fish. So I substitute with shrimp {yep, that's frozen shrimp... Haven't seen any fresh shrimp either}
*This recipe does not actually call for avocado or tomato. However, when I hear 'taco' I think guacamole. 

Combine cilantro, lime juice
{don't you just love my lime juicer thing-a-ma-bob... I do}
lime
olive oil, onion, garlic, chili, garlic powder, cumin, & paprika in a blender
{another alteration, our access to spices is limited... so I make due and try to substitute when possible}
with a pinch of salt

Puree until thoroughly combined & smooth. 
Take a few moments to prepare your condiments...

{we ate our rocking shrimp tacos with some good ole' cheddar. Cheese is another thing that is hard to get here and when you find good cheese you pay a pretty penny (or peso) for it. But due to my appropriate obsession with cheese, it's a price I'm willing to pay}
Now focus on your fish {or shrimp}
Cook over some olive oil and when ready add the wine & cook until evaporated 
{a great excuse to have a glass of wine while cooking is actually using it as a recipe. Unfortunately this particular bottle of white wasn't the most enticing bottle I've ever taken the cork out of... SO excited for some Cakebread in a few short months}

Pour over the cilantro mixture and cook for just a few minutes to 'let the flavors say Hello'
{that's straight from the recipe and a great line if I do say so myself}
Serve immediately....

Here's the recipe for Lee's Rocking Fish Tacos:

Serves: 8
  • A bunch of cilantro
  • Juice of 5 limes
  • 1/3 cup of olive oil, plus 2 tablespoons for cooking
  • 1 small white onion, roughly chopped
  • 2 cloves garlic, smashed
  • 1 jalapeƱo or 3 red fresno chili peppers, roughly chopped
  • 1/2 tablespoon garlic powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • Coarse salt
  • 2 pounds halibut, finely diced
  • Freshly ground black pepper
  • 1/2 cup white wine
Combine the cilantro, lime juice, 1/3 cup olive oil, onion, garlic, chili, garlic powder, cumin and paprika together in a blender with a large pinch of salt and puree until thoroughly combined and smooth. Set the mixture aside. Heat the remaining 2 tablespoons of olive oil over medium-high heat in a large pot and add the halibut. Cook, stirring now and then, until golden brown, about 8 minutes. Add the white wine and cook until nearly evaporated, about 2 minutes. Pour over the reserved cilantro mixture, stir gently just to combine and cook for just another minute to let all the flavors say hello. Serve immediately with deep-fried flour tortillas, crema fresca (or sour cream), cotija cheese, and a fresh pico de gallo with chunks of avocado (mix equal parts diced tomatoes and avocado and then season with salt, pepper, fresh cilantro, lime and diced red onion).

Bella's Independence Day

Bella has spent many of her summer days at my parent's finished 'cottage' on the lake...aka The Pour House {you can read about it here}.
She loves it... she turns into a giddy little boxer baby, except for when she gets so excited she forgets she is completely surrounded by water and jumps off right into the water. She's not really a fan of swimming. So, in order to be safe and get her more familiar and comfortable in the water, she sported this.....

I received word that her anxiety didn't allow her to enjoy the water and she didn't last long, even with her life jacket.
So, what helps one relax in the water?

Happy 4th of July

Guess what?
Monday, July 4th is a holiday in Colombia...
but not to celebrate America's Independence.
Nope.
A day to celebrate San Pedro y San Pablo
{Saint Peter & Saint Paul}

More than likely my hubs will be working
and I will be celebrating San Pedro y San Pablo
but in my heart 
I'll be celebrating the 4th with all of you.

I have been thinking incessantly about how the McQuinn's would be
spending Independence Day if they were located north.
Well, it would look a little something like this...

day 30

This is it... Day 30
The photography challenge has come to a close.
What have I learned....
That I have a lot to learn..... but I intend to keep working at it, as well as carrying my camera around with me more often to take in all that Cartagena has to offer.
An additional positive of the challenge is that it made me accountable for blogging {even though I didn't do it daily and clumped many days together}. Therefore I will be blogging more often with the random happenings of our Colombian adventure {I'm sure this will make our mothers very happy:)}

day twenty-nine & the 2 month mark

well, well, well, happy anniversary cartagena. 
You've been hosting the McQuinn's for a whole 2 months. 
How does it feel?
Somedays I think it has flown by
and then when I think of the reality
of being here for 2 - 3 years... 
only 2 months...
really?

We're just getting started and I know there is a lot more adventure ahead of us

Day 29: Black & White
While we camped up in the Hilton for our first month we sent our laundry to be serviced. You remember their lovely laundered shirts. Well, a draw back of that process {besides my lack of control} was this...
457forever
One every piece that was laundered that had a 'tag' our room number was inked. I totally understand the point, but there is something about slipping a shirt over my head {or even putting underwear on} and seeing the number 457. Do we really need to constantly be reminded about 'el hilton'?

the simple things.

today I had a beach rondezvous planned with the girls
but
I awoke this morning to a red
& itchy chest.
Is it back?
Am I allergic to Cartagena?
Oh, how I wish I knew

Yesterday was a warm day and Alice and I spent a few hours at the pool
At one point she noticed my chest was red so I put some spray 
SPF 30 {Target brand from US}
just in that vicinity.
Alice thinks it is just sunburn.
I hope she is right & recognize
that I could be slightly
'kah-razy'
when it comes to this rash/skin situation. 
I have applied some lotion to it and hoping tomorrow it 
looks a whole lot better & 
slightly toned down.

My beach day turned into supermarket day.
I bought these to make me feel better.
